Banana Pancakes
Ideal for breakfast, especially if, like me, you cannot eat eggs as eggs but still need the protein. This is a fabulous recipe with the shortest list of ingredients around!

Makes 6 mini pancakes
  Preparation time: Two minutes  


1 ripe (the softer the better) banana
2 free range eggs

Olive oil for frying


Peel the banana and break it up into a bowl.
Add the two eggs and using a hand-whisk, whip for a couple of minutes into a frothy batter.
Heat a small amount of olive oil in a thick-based frying pan.
Spoon in small amounts of batter to create a pancake approx 10cm in diameter (I fit three into a large frying pan).
Fry until golden and set on one side, then flip over and fry the other side. Note: flipping can be difficult but much easier if you keep the pancakes small.
Serve immediately.

Cinnamon sugar
Strawberries or other fresh fruits
