Cucumber Lemonade
I've got a glut of.....Cucumbers!
I found Cucumber Lemonade on a menu in a Russian café whilst on a business trip, and what a happy find it was on a scorching hot day. After researching recipes online and trying numerous variations, this is my version


4 mini or 2 large Cucumbers
Juice from 6 Lemons
1/3 cup Stevia, granulated sugar or combination of both
2 cups cold Water
Few sprigs of Mint
75ml Sparkling water

1 Orange, sliced
1 Lemon, sliced
Few more Mint leaves
Ice cubes


Peel and chop the cucumber and place in a food processor or blender with a couple of sprigs of mint until pulped. Strain the resulting pulp through a muslin.

Discard the contents of the muslin (or feed to your hens!).
Add the juice of six lemons, two cups of cold water and the sugar, stirring well until the sugar is dissolved.

Chill until ready to serve.

To serve: Pour into a large jug or drinks dispenser and pour in carbonated water to taste (roughly one large bottle of sparking water).

Add ice cubes and the slices of orange and lemon and the remaining mint leaves.

(Serve alone, or try with Gin for a lovely refreshing cocktail, or white rum for a Carribean twist.)
